Cheesy Ketchup Quesadillas

Golden, gooey, and oh-so-cheesy! These quesadillas are stuffed with melty cheese and a tangy twist of Mama Bear Ketchup, the ultimate comfort snack that’s perfect for dinner, lunch or even a Mexican style breakfast!

Serves 4

Ingredients:

  • 1 teaspoon olive oil

  • ½ small onion, chopped

  • 1 red pepper, finely diced (or any favourite veggie)

  • 180g cooked black beans or lentils

  • ½ teaspoon garlic powder

  • Pinch of salt & pepper

  • 8 small wholemeal tortillas

  • 240g grated cheddar or mozzarella

  • 4 teaspoons Mama Bear ketchup


Directions:

  1. Cook the Veggies:
    Heat olive oil in a pan, add onion and red pepper, and cook for 3–4 minutes until soft. Stir in beans, garlic powder, salt, and pepper. Cook for another 2 minutes, then remove from heat.

  2. Assemble the Quesadilla:
    Lay one tortilla on a pan, sprinkle cheese, add veggie mix, drizzle ketchup, top with more cheese, and cover with a second tortilla.

  3. Toast & Flip:
    Cook on medium heat for 2–3 minutes per side..

  4. Cut & Serve:
