Cheesy Ketchup Quesadillas
Golden, gooey, and oh-so-cheesy! These quesadillas are stuffed with melty cheese and a tangy twist of Mama Bear Ketchup, the ultimate comfort snack that’s perfect for dinner, lunch or even a Mexican style breakfast!
Serves 4
Ingredients:
1 teaspoon olive oil
½ small onion, chopped
1 red pepper, finely diced (or any favourite veggie)
180g cooked black beans or lentils
½ teaspoon garlic powder
Pinch of salt & pepper
8 small wholemeal tortillas
240g grated cheddar or mozzarella
4 teaspoons Mama Bear ketchup
Directions:
Cook the Veggies:
Heat olive oil in a pan, add onion and red pepper, and cook for 3–4 minutes until soft. Stir in beans, garlic powder, salt, and pepper. Cook for another 2 minutes, then remove from heat.Assemble the Quesadilla:
Lay one tortilla on a pan, sprinkle cheese, add veggie mix, drizzle ketchup, top with more cheese, and cover with a second tortilla.Toast & Flip:
Cook on medium heat for 2–3 minutes per side..Cut & Serve:
